Bottle size: 750 mL
Eyes: Pale yellow core with straw coloured rim.
Nose: Strong quince aromas combined with apple and unripe peach notes that follow through to the palate.
Mouth: Tantalising mousse releases a vibrant mix of fruit flavours which ends with a clean, integrated aftertaste. Would be classified as Extra Brut in terms of sweetness.
Recommended food pairings: A fantastic aperitif and celebration tipple but also a multi-faceted food wine which complements a range of dishes from salads to pastas to grilled dishes with seafood or poultry.
Winemaker: Corlea Fourie
Growing conditions: The base wine for this MCC was made from one specific vineyard in the Bovlei Valley that expressed clear fruit and elegance.
Winemaking notes: Pressed at a low sugar level to be able to go through a second bottle fermentation. The base wine spent 9 months in older oak barrels and 18 months on its second fermentation lees in bottle. The wine was disgorged to give rise to the final product – sunshine in a glass.
